Matcha is powdered tencha ground on a millstone and is characterized by its rich flavor and bright green color. Hojicha, on the other hand, is made by roasting sencha or bancha over high heat and is characterized by its savory aroma and mild flavor.

Ceremonial grade matcha is the highest quality matcha, traditionally used in Japanese tea ceremonies and by tea practitioners. Known for its vibrant green color, smooth umami richness, and natural sweetness with minimal bitterness, it offers a refined drinking experience rooted in centuries of tradition.

This premium matcha is made from the youngest, most tender leaves picked during the first spring harvest, known as ichibancha. These leaves are often hand-picked to ensure exceptional quality, then carefully stone-ground using traditional mills to produce an ultra-fine powder. The result is a matcha that dissolves smoothly with no graininess, delivering a velvety mouthfeel and a clean, elegant finish.

Ceremonial grade matcha is commonly used to prepare koicha, or thick tea, which is served during formal tea gatherings to honor guests. Its color is a vivid, luminous green that reflects the freshness of the leaves, while its flavor profile is rich in umami, delicately sweet, and low in bitterness.
